Easter is just around the corner and of course a juicy carrot cake is a must during the holidays. This vegan carrot cake is the perfect addition to your Easter menu and is the perfect treat for anyone looking for a delicious, plant-based alternative.
Ingredients for the dough
- 325g flour
- 200g sugar
- 180ml oil
- Egg substitute for 4 eggs
- 2 tsp baking cocoa
- 1 tsp cinnamon
- 500g carrots
- 100g walnuts
- 50g raisins
Ingredients for the frosting
- 200g vegan butter
- 400g vegan cream cheese
- 100g powdered sugar
- 1.5 tsp vanilla extract
Step 1
Preheat oven to 180°C top/bottom heat.
Put the egg replacer and sugar in a bowl and beat with a hand mixer for about 5 minutes until creamy. Then stir in the oil very briefly.
Step 2
Mix the flour, baking cocoa, baking powder and cinnamon together. Then carefully sieve the dry ingredients into the egg substitute-sugar-oil mixture and mix again briefly with the hand mixer. Then add vanilla extract.
Step 3
Grate the carrots finely and add to the dough. Also add walnuts and raisins and fold in. If you feel like your dough is too thick, you can add a dash of plant-based milk.

Step 4
Divide the dough into two 25cm molds and place in the preheated oven for about 45 minutes.
Tip: To check whether the cake is fully baked, you can test with a chopstick. To do this, insert a wooden stick into the middle of the cake. If the stick comes out clean, without any dough residue, the cake is baked through. If leftover dough sticks to the stick, the cake needs a little more time in the oven.
Step 5
While the base cools down, you can concentrate on the frosting. Beat the room temperature vegan butter with a hand mixer until light and creamy. Add the vegan cream cheese and stir it in briefly. Then stir in vanilla extract and sifted powdered sugar. If the cream is too soft, put it in the fridge for 30 minutes and stir again and again.

Step 6
Put some frosting on the first layer and smooth it out. Place the next dough base and distribute the frosting evenly. Decorate with walnuts. Refrigerate until serving.
