These vegan mango macadamia cookies with white chocolate are incredibly delicious. The perfect mix of fruity, sweet and salty. See for yourself!
You need:
- 180g flour
- 1 tsp baking soda
- 1/2 tsp salt
- a pack of vanilla sugar
- 80g white sugar
- 40g brown sugar
- 125g vegan butter
- 1tbsp agave syrup
- 3 tbsp applesauce
- 60g dried mango
- 50g vegan white chocolate
- 60g macadamia nuts
Step 1
Preheat oven to 190° top and bottom heat.
Step 2
Roughly chop the mango, macadamia and white chocolate.
Step 3
Mix flour, baking soda and salt in a small bowl. In a large bowl combine the vegan butter, vanilla sugar, white & Beat brown sugar until creamy. Then add agave syrup and applesauce and stir again.
Step 4
Add the flour mixture to the butter mixture and fold in with a spatula until everything is well mixed. Also fold in the mango, macadamia and white chocolate.
Step 5
Now form balls of approximately the same size by hand and place them on a baking tray.
Step 6
Bake cookies for about 10 minutes. Make sure they don't get too dark. When you take them out of the oven, let the cookies cool and set for about 15 minutes.
