Tasty, filling and super easy to prepare. These vegan carrot over night oats are perfect for your meal prepping and promise a good start to the day.

For one serving you need
  • 40g oat flakes
  • 100ml almond milk or another plant milk
  • 30g grated or very finely chopped carrots
  • 6g walnuts coarsely chopped
  • 15g raisins
  • 10ml maple syrup or agave syrup
  • 10g coconut flakes or finely chopped coconut chips
  • 0.5 teaspoon cinnamon
Optional

Extra nuts, soy yogurt, grated carrots and coconut flakes for garnish

Step 1

Place oats, non-dairy milk, carrots, walnuts, raisins, maple syrup, cinnamon and coconut flakes in a bowl. Stir the ingredients until everything is well mixed.

Tip: Depending on the plant milk, the amount of liquid required may differ. If your mixture is too thick, simply add a little more plant milk.

Step 2

Pour the mixture into a sealable container and place the jar in the refrigerator overnight.

Step 3

Take the glass out of the fridge shortly before consumption. Optionally, you can now garnish your overnight oats with soy yogurt, coconut flakes, grated carrots and nuts. If the oats are too firm for you, just add a little more plant milk.

The carrot overnight oats will keep in an airtight container in the refrigerator for 2-3 days.
